Why we do it
Respecting tradition does not mean giving up experimenting. In the time that passes between the vines and the cellar, it happens that ideas and suggestions pass through our heads. Questions with answers that can only be found in the evidence of the facts. What happens to a white wine if it ages and ages in wood?
Where we do it
Our rows of Arneis are on the Camestrì vineyard, which they willingly share with Favorita’s vines. The sandy soil from which fossil shells emerge, the rose gardens, the right slope and the right exposure are a perfect summary of all that Roero means for wine. From such a special place we collect bunches of such reliable quality that we can force the rules and make it our own.
How to do it
You take a great white and treat it like it’s a red. It protects the freshness and acidity that Arneis is so fond of and that allows you to recognize it at the first sip. The oak of the barrique gives him the added scents of wood and bread crust. In the mouth, everything combines in a feeling of warmth and fullness, which you would have said could only belong to red wines. The time spent in the bottle is used to give persistence, not to extinguish this particular flavour too soon.
How to drink it
Confident of its original identity, it is a wine that does not pretend to please everyone. A bit like the blue cheeses that are gladly accompanied: those who choose it do not do it out of habit or distraction. And like all things at once complex and precious, it takes time and concentration. They call them “meditation wines”; they are those glasses that alone know how to build open views, laid tables, paths of perfume around them.
