Why we do it
Nature does not always agree with our plans. An afternoon of pounding hail can undo a year’s worth of care in one of the world’s finest grape varieties. But nothing happens in vain and nothing is wasted: we try rather to get something good, and again, even from the vagaries of time.
Where we do it
Where Roero is known for its impossible slopes, where Vezza d ‘Alba is like a postcard, there is the Pin da Cola vineyard. Ancient vines, which we appreciate not only for the value they give to our wine, but because they are a living and precious legacy of those who have left us, in addition to the land, the dedication to the craft of winemakers.
How to do it
It takes a little courage and a lot of experience to make a virtue out of necessity, a white from the grapes that produces the king of the reds, an amazing glass from less than perfect berries. We press the fog clusters and keep them in contact with the skins just enough to give a shade of optimistic pink. Then we proceed with a white vinification. The result is as fresh and delicate as morning dew: or, in Piedmontese, Rusà.
How to drink it
The positivity of the rose and the freshness of this unusual mist go hand in hand with dishes that bring joy. The one that stimulates the curiosity to discover a thousand different flavours of the appetizer or the indulgence to indulge in a dish that smells like the sea. A pleasant wine precisely because it does not require too many reflections: just think of the colour to find the right agreement.
